2. Cut the cauliflower in half and clean it of the leaves and spine. Bring a saucepan of water to a boil, and when the water starts to boil, add the cauliflower, cover it with a lid and let it boil for 5 minutes. We take it out of the water, let it cool, and then unwrap it in bunches.

3. Use a heat-resistant tray lined with a little olive oil. Put the bunches of cauliflower together with the soybeans, salt and pepper and mix. Pour the chickpea flour mixture on top and season with finely chopped green parsley. Optionally we can spread a little Parveggio Parmesan.
