One of the most prepared sweets in Naples on Carnival day is the migliaccio. Milleccio is a typical recipe of our tradition and what I show you today is exactly my grandmother's recipe, which I usually follow step by step, adapted for the use of the Thermomix.
How to make the Neapolitan miles
Put the lemon zest in the jug and chop for 20 sec.
Set aside half of the grated zest, add 70 g of sugar to the jug and chop for 10 sec., Speed. 7.
Add the milk, vanilla bean, water and butter and cook for 5 min at 90 °, speed 4.
Lift the vanilla pod and with the blades running, slowly add the semolina and cook for another 3 min., Again at 90 °, speed. 4.
Turn off, transfer to a bowl and let it cool.
Put the eggs in the jug with the remaining sugar, the grated lemon zest and set aside, the grated orange zest, the vanilla essence and the limoncello (if you have decided to use ricotta, add it now) and work for 40 sec. at vel. 6 and then for 10 sec. 7.
Add the semolina and mix for 40 sec., Speed 6.
Pour the mixture into a greased and floured baking tray, bake at 180 ° C in a preheated convection oven and cook for about 40 minutes or until it is golden-brown in color.
Let it cool for at least 2 hours before cutting and serving.
