Broccoli and bacon pasta recipe Flavia Imperatore of 17-10-2017 [Updated on 17-10-2017]
Pasta with broccoli and bacon is a simple and nutritious first course. In order not to lose all the properties of the broccoli it is preferable to steam them before transferring them to the pan and proceeding with the recipe. It is usually usual to bring the orecchiette with broccoli, in reality these vegetables combine with different pasta shapes but above all with short ones, such as the fusilli that I have chosen to use.
This morning here in Naples there is a gray sky and fog and I am trying to fight my climatic mood by listening to the music at full volume, with the hope of finding a bit of determination to start facing this new working day in the best possible way. So I leave you to the recipe and we will read later: *
How to make broccoli and bacon pasta
Clean the broccoli by cutting the various florets and washing them with cold running water.
Put them in the steamer and cook for 5 minutes with the lid on.
Set aside the pot with the water and salt that you used to cook the vegetables.
Brown the garlic in the oil in a pan and add the broccoli.
Cook for about 2 minutes.
Lift half of the broccoli and set aside.
Then put the diced bacon and pepper and cook for about 5 minutes.
Take the broccoli that you have set aside and blend them with 1 ladle of cooking water and the pecorino.
Then cook the pasta in the broccoli cooking water, drain it al dente and put it in a pan with the sauce.
Add the broccoli cream and cook for 1 minute, mixing the ingredients.
Your broccoli and pancetta pasta is ready to be brought to the table.
