This roasted mini pepper crostini with olives and caramelized onions is the perfect party appetizer! Make ahead, serve at room temp, easy!

Oh my. You know a recipe hits it out of the park when a certain family octogenarian (my dad) comes over mid-party prep and can’t stop eating it.

That’s the problem with appetizers, right? If they’re good, only half of them make it to your guests! (LOL I’m passing the blame on my father, but let’s be truthful here, I’m just as guilty. Just make more. Problem solved.)

These Roasted Pepper Crostini are made with sweet mini peppers that have been halved, stuffed with salty capers, sweet cherry tomatoes, and buttery California Ripe Olives, and roasted on a bed of balsamic-tossed sliced red onions.

When the peppers are done, you top toasted baguette slices first with the caramelized onions and then with the stuffed roasted peppers.

Every bite yields a crunchy, juicy flavor explosion! California Ripe Olives are perfect for this dish because their mild, buttery, meaty flavor balances the acidity from the tomatoes, capers, and onions. The olives are also like sponges–they absorb flavor from peppers, tomatoes, and capers during the cooking process.

Why California Ripe Olives? Forgive me for being just a little proud of my home state. The answer is quality.

Here in California there are thousands of acres of olive trees planted throughout the state–north, central, and south–that provide the olives for the ripe olive industry. Olives trees are particularly well-suited for the Mediterranean climate of California. The trees are drought resistant, can thrive in less than ideal soils, and love our long, hot summers.

In fact, California produces 95% of the olives grown in the United States.

Most of the ripe olive farms are owned and operated by families who have been farming the olives for generations. To achieve the high standards of quality needed for canned olives, the fruit must be picked by hand with care, never touching the soil. When it comes to processing the olives, every step is regulated by the USDA to ensure quality.

Back to our crostini! You can easily make the peppers and toast the bread ahead of time. You can even assemble the crostini an hour or two ahead. This appetizer works served warm or at room temperature. My one piece of advice? Make extra.

Olive-Stuffed Roasted Mini-Pepper Crostini with Caramelized Onions Recipe

If you want to make ahead, you can assemble the onions and peppers in the baking dish a day ahead. You can roast the peppers and toast the baguette slices a few hours ahead of serving, and assemble the crostini an hour or two before serving.

This appetizer is best served at room temperature.


  • 24 (1/4-inch thick) slices of baguette
  • 2 small red onions, peeled, thinly sliced (2 to 3 cups)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1 cup water or stock
  • 12 mini (2- to 3-inch) red, yellow, and orange sweet peppers
  • 1 tablespoon capers, rinsed and drained
  • 12 cherry tomatoes, halved
  • 24 black or green California Ripe Olives, drained and halved
  • Several sprigs of fresh thyme
  • 9x13-inch baking dish


1 Preheat the oven to 450°F. Set one oven rack in the upper third of the oven and another rack in the lower third.

2 Toast the bread: Spread the baguette slices in a single layer on a baking sheet. Place on the top rack of the oven and toast in the oven for 4 minutes. Remove from oven and let cool to room temp.

3 Line the baking dish with onions: Place the thinly sliced onions in a 9x13-inch baking dish and toss with 2 tablespoons of olive oil.

Spread the onions out over the bottom of the pan. Sprinkle with 1 tablespoon balsamic vinegar and 1/4 teaspoon of salt.

Pour 1 cup of water or stock onto the onions in the baking dish.

4 Prepare the mini peppers: Cut the peppers in half lengthwise through the stem. Pull out and discard the seeds.

Set pepper halves on top of the sliced onions in the baking pan, hollow side facing up.

5 Stuff the peppers: Sprinkle 3 to 4 capers inside each pepper half. Distribute the olive halves and cherry tomato halves among the pepper cavities.

Place a few thyme sprigs among the peppers.

Drizzle the peppers with the remaining 1 tablespoon of olive oil.

6 Roast the peppers: Cover the pan with aluminum foil. Bake in the oven at 450°F for about 30 minutes on the lower shelf of the oven, or until the peppers are soft.

Remove the foil and return the peppers to the top shelf of the oven for 10 to 15 more minutes, until the peppers have started to brown at the edges.

If the bottom of the pan becomes dry at any time, pour in a little more water. Remove the pan from the oven and remove the thyme sprigs.

7 Assemble the crostini: Move one of the peppers aside in the roasting dish to reveal the caramelized onions below. Place a forkful of onions on a toasted bread slice. Top with the pepper. Repeat until all of the crostini have been topped with peppers.

Serve warm or at room temperature. Garnish the platter with a few sprigs of fresh thyme.

Italian Style Red Pepper Antipasto & Crostini

  • 2 or 3 roasted red peppers, peeled and deseeded
  • 1 or 2 cloves fresh garlic, minced
  • 2 or 3 tbsp good quality extra virgin olive oil
  • 1/2 tsp or more sea salt or Kosher salt
  • 2 shakes of dried oregano

Tear the peppers into strips, and place in a bowl.

Add the garlic, extra virgin olive oil, salt and oregano, if using and mix well.

I’d recommend making this a few hours before you’d like to serve it so the flavors have time to develop.

Use on an antipasto plate, as a side dish, on crostini, in a sandwich or however you choose, you won’t be disappointed.

Top 20 Uses For Roasted Red Peppers

My refrigerator is never without roasted red peppers. Not only do they add smoky, tangy depth to virtually any dish, they're nutrient blockbusters, boasting 213% of the RDA for vitamin C per 100 grams (3.5 ounces). That's great news because vitamin C is a potent antioxidant that protects cells from free radical damage, boosts immunity, helps ward off infection, and reduces inflammation. Vitamin C is also vital for the synthesis of collagen, a structural protein that maintains the integrity of blood vessels, skin, organs, and bones. But that's not all. Note: To roast your own peppers, hold them over the flame of a gas grill or place halves (skin-side-up) under the broiler until the skin is charred and blackened. Once blackened, transfer peppers to a plastic bag to steam for a few minutes. When cool enough the handle, remove the blackened skin and use the peppers as desired.

Caramelized onions, sweet caramel-colored ribbons, mixed with sautéed bell peppers are delicious with steak or spicy Italian sausage.


  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, peeled and sliced into 1/4-inch strips
  • 4 bell peppers, stemmed, seeded and cut into 1/4-inch strips
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon fresh thyme, finely chopped (or 1/2 teaspoon dried thyme)


  1. Heat the oil in a large skillet over medium-high heat. Add the onions, peppers, salt and pepper.
  2. Reduce the heat to medium-low and cook, stirring frequently, until the onions are caramelized and the peppers are tender and slightly browned, 15 to 20 minutes. If a brown coating forms on the bottom of the pan during the cooking process, add a few tablespoons of water and stir repeat as necessary.
  3. Add balsamic vinegar and thyme and turn the heat down to low. Cook for a few more minutes. Taste and adjust seasoning, if necessary. Serve hot or at room temperature.

Your feta cheese filling

The filling for these peppers was inspired by my favorite salad in the world. A GREEK salad. It is healthy, easy to make and so flavorful. I used red onions, which are a must, oregano, red wine vinegar, olive oil, and of course FETA!! Get the best feta cheese you can find. I love Dodoni feta because they sell their feta in a brine which keeps it super creamy.

You can add other ingredients to your filling like:

  • fresh dill/basil
  • olives
  • capes
  • tomatoes
  • garlic
  • spinach

Bell peppers pretty much go with anything and can handle lots of flavor so have fun experimenting!

Recipe Summary

  • ⅓ cup grated Parmesan cheese

Preheat the oven to 400 degrees F (200 degrees C).

Pasta with Caramelized Onions, Roasted Tomatoes and Herbs

This dish came in a burst of pasta inspiration one day, years back, and it’s been a staple of our pasta repertoire ever since. It’s rich, savory, sweet and herbaceous — and it’s a bit unusual, too. It makes use of our beloved caramelized onion puree, aka caramelized onion magic, adding extra olive oil and starchy pasta cooking water to transform the puree into a silky, supple sauce. If you have some peppery arugula on hand, feel free to toss a few handfuls of that into the final mix, too a solid black pepper bite is one of the key elements here (along with sweet-tart-garlicky roasted tomatoes and sweet-savory caramelized onions). We love this with bucatini, but any twirl-friendly pasta will do.


  • 5 tablespoons olive oil, divided
  • 2 cups small tomatoes, halved through the waist*
  • 4 large cloves garlic, minced
  • Sea salt and Black pepper
  • ¾ pound dried spaghetti, bucatini, papardelle or tagliatelle
  • ¾ cup caramelized onion magic
  • ½ cup chopped parsley
  • 1 tablespoon minced oregano leaves
  • 1 tablespoon minced rosemary leaves


Preheat the oven to 325°F. Add 3 tablespoons of the olive oil to a roasting pan or an oven-safe sauté pan big enough to hold all the tomatoes, snugly. Place the tomatoes in the pan, cut-side-up, sprinkle the garlic over top, and season thoroughly with salt and pepper. Roast for 20-30 minutes, until the tomatoes have collapsed and the pan is filled with garlic-tomato-olive oil juices. (Yum.)

Bring a large pot of salted water to a boil and cook the pasta to al dente. Drain, reserving ½ cup of the pasta cooking water. Toss the pasta with the roasted tomatoes and all their pan juices. In a blender, thin the caramelized onion magic with the remaining 2 tablespoons of olive oil and a good bit of the pasta water (at least 2-3 tablespoons). Once silky and saucy, toss it with the pasta and tomatoes, add the herbs, and finish things off with a final sprinkle of sea salt and a load of black pepper.

*don’t bother halving any super tiny ones just roast ‘em whole and they’ll burst

So you guys know that I’m always on the hunt for quick and easy recipes that are super delicious! Well, give this roasted potatoes, onions, and red peppers recipe a try and you won’t be sorry!
